Time to use what’s good!

Or to use what’s good right now…

Squashes are in, and they are not only to be carved to shine. Eat them too! Squash  the food of the fall. This means it is at its peak of nutrition and it’s lower in price.

The best way that I have found to prepare them so far is to cut the squash in half, throw the seeds in the compost (or roast them – see below ~ ed.)`, and turn them over in a dish half filled with water. I put them in the oven and around fifty minutes later (when the skin is dark in some spots), I can scoop out the cooked flesh very easily.

I, then can blend it, add sour cream, nutmeg etc.

Squashes make great orange soups for the fall!
